I started doing meal prep at the beginning of this year. Just like with diet, meal prep is a journey in it’s own little world. So what happens when you combine meal prep + low carb diet? Hmmmm.
If you are interested in doing low carb diet, the first few weeks can be so overwhelming. I used to struggle a lot especially with recipes and low carb ingredients. I spent hours of research but there aren’t that much material available for low carb diet, unless of course I pay in exchange for a few recipes of which I am sure the ingredients are, if not expensive were hardly available here in Cebu.
So here’s a few meal prep ideas for lunch you can bring to the office, low carb or not. Bon appétit!

Meal #1: Pork Adobo, Boiled Egg, Rice Topped with Furikake, Buttered Corn and Oranges
Meal #2: Burger Patties, Maruya (Banana Fritata), Rice Topped with Furikake and Cucumber
Meal #3: Fried Fish, Steamed Broccoli, Carrots and Cauliflower, Buttered Corn and Rice Topped with Furikake
Meal #4: Mongolian Beef, Stir Fried Veggies in Sesame Oil, Boiled Egg, Rice Topped with Furikake and Cucumber

These meals actually worked for me and my husband. You can customize one for your own diet especially if you have allergies or any pre-existing medical conditions. As you can see, we have the same food except that I don’t eat rice because I am doing low carb diet.
As for my husband, he limits his red meat consumption thus explains the chicken for majority of the meals.
You can also notice that we keep on repeating the same food such as cucumber. My husband says it keeps him full while for me it’s obviously because it’s low carb.
We cooked everything every Sunday. Store them on an airtight container and refrigerate. Although we have the same lunch all over the week, this saves us more time, energy and money!
